My husband and I found some fresh salmon on sale at Lidl, our newest favorite store for Sunday-afternoon grocery excursions.
Charles proceeded to find a lovely salmon patty recipe from Cast Iron Keto.
And I proceeded to find the most perfect almond-flour bun to put them on!
We had fresh salmon, so whereas the original recipe calls for canned, we had to cook ours first. Not hard, but a mite tedious. We would probably use canned next time. We also didn’t have any avocado, which the recipe calls for ~ apparently for the purpose of helping to stick the fish together. So we added an extra egg, and the burgers turned out dericious.
(Here’s mine after the first bite ~ I was a hungry weasel! ~ along with stir-fried veggies, which will have to be another post!)
Keto-Friendly Salmon Burgers
1 (14.5-oz.) can salmon
2-3 scallions, minced
1/2 cup almond flour
3 eggs
1 tsp. salt
1/2 tsp. pepper
1/4 cup butter
Combine salmon, scallions, almond flour, eggs, salt, and pepper together in a bowl. Mix well and form into 6 patties.
Melt butter in a skillet over medium heat. Brown patties in butter, about 4-5 minutes per side. Drain on a paper-towel-covered plate. Serve on hamburger buns with mayonnaise and lemon juice.

I can do canned salmon…the bones 😳. I can’t wait to make those buns! They were so yummy!
Yeah…Charles was hesitant about the bones, but once it’s all mixed up in the burgers you don’t even notice them. 🙂
